Churrasco
The Heart of Brazilian Culinary Tradition

Churrasco—meaning “barbecue” in Portuguese—represents far more than a cooking technique. It embodies centuries of South American tradition, community, and the art of fire-roasted meats perfected by generations of gauchos across the grasslands of Southern Brazil.
At Samba Steakhouse in Sugar Hill, Georgia, we honor this rich heritage by bringing the authentic rodízio experience to Metro Atlanta. Our founding brothers grew up learning the intricacies of churrasco on their family farms in the mountainous countryside of Rio Grande do Sul, where the tradition runs deepest.
The roots of churrasco trace back to indigenous South American peoples, particularly the Guaraní and Tupinambá tribes, who cooked skewered meats over open flame pits long before European contact. When Portuguese colonists arrived in Brazil, they introduced new seasonings, cuts, and grilling techniques that merged with indigenous methods to create what we now recognize as Brazilian churrasco. According to the Smithsonian’s National Museum of the American Indian, these culinary exchanges shaped food traditions across the Americas in profound ways.

Where Tradition Meets Technique
The gauchos of Southern Brazil, Argentina, and Uruguay developed churrasco during long cattle drives across the pampas grasslands. These skilled horsemen needed hearty, flavorful meals that could be prepared over open fires with minimal equipment. What began as practical sustenance evolved into an art form—one that Samba Steakhouse proudly continues in our 2,000-square-foot dining room.
Our founding brothers carry this legacy in their blood. Growing up in Rio Grande do Sul, they learned from their family how to select the finest cuts, how to read the flames, and how to slice each piece at precisely the right angle to maximize tenderness. When they opened Samba Steakhouse on Mother’s Day 2017, they brought these lessons—and this passion—to Georgia.
The James Beard Foundation recognizes Brazilian churrasco as one of the world’s great barbecue traditions, celebrating how regional techniques create distinctive flavors that cannot be replicated through other cooking methods.
